Sindhi Mutton- Rachana

Recipe of Sindhi style mutton
500gms mutton
500 GMs onions cut into slices
Two medium size tomatoes
Ginger garlic paste
Green chillies
Salt
Turmeric
Red chilli powder
Dhaniya powder
Garam Masala (I used home made)
Cardamom 4
Bay leaf 2
Cinnamon sticks
Cumin powder
Ghee for cooking
Method
Heat ghee in Kadai or sipri,  add all whole spices. Now add sliced onions and cook till brownish. Then add mutton , keep stirring at regular intervals. Don’t add water as the mutton will leave it own juices. Add ginger garlic paste and all dry spices. Mix well n keep stirring. All this is to be cooked at low flame. Add finely chopped tomatoes when the mutton is 80% cooked. Cook for few minutes n later add little water n cover the lid. You can add water as per your desired consistency. Check if the mutton is cooked properly. Garnish with coriander leaves n sprinkle garam Masala too.
I generally Cook mutton in open pot method n it takes more than 2 hrs in cooking. Depends on the size of meat you buy n quantity too.
