Recipe of Lentil Soup – Rachana Nagrani Ahmedabad

Hello again with a new Soup today. Wanted to have something lite in lunch in this damp and wet weather, not the regular sabzi roti. So thought of making a soup with the veges available in my fridge. And made this LENTIL SOUP with lots of vegetables. So here are the ingredients you need

 One big onion cut into small cubes
Two medium tomatoes cut into small cubes
4 garlic cloves crushed
One inch ginger piece shredded
One bay leaf
One carrot cut into small cubes or round shape
French beans cut into medium pieces
Baby corns cut into medium pieces
Split chickpeas – half cup soaked in water for an hour
Parsley for garnish
Vegetable stock – 4 to 5 cups
Salt to taste
Red chilli powder – half tsp
Black pepper powder – half tsp
Lemon zest – 1 tsp (optional)
Oil – two spoons
METHOD
Heat oil in a pan, add onions and bay leaf and cook till the onions are translucent. Now add crushed garlic, cook till the rawness of garlic is gone. Later add tomatoes and soaked split chickpeas, pour vegetable stock and let it boil. When its boiling, add carrots, french beans, baby corns and shredded ginger and let it cook for 15 minutes or till the lentils and veges are cooked. Add salt as per taste, red chilli powder, black pepper and lemon zest. Turn off the gas when its done. Garnish with parsley and serve hot with garlic toast.
PS – For non vegetarians you can use chicken stock and chicken chunks
This is a one pot healthy meal.
