Recipe of Corn Potato Cheese Balls-Rachana Nagrani

Ingredients

3 medium potatoes boiled, peeled and mashed
One cup of boiled corn kernels
Finely chopped coriander leaves
Salt as per taste
Red chili flakes – 2tsp
Oregano – 1/2tsp to 1tsp
Roasted garlic powder – 1/2tsp
Shredded cheese – 3 to 4 cubes
Cornflour – 2 to 3 spoons
All purpose flour – half cup
Oil for frying
Breadcrumbs for coating – 3/4 cup
Method
In a bowl, mash the boiled potatoes, add corn kernels to it, chopped coriander leaves and all the other spices. Also add cornflour for binding. Keep this mixture in fridge for an hour. Now take a very small amount of this mixture and press it on your palm , fill in the shredded cheese in the middle and wrap it up in a ball shape. Now take two small bowls, one for breadcrumbs and other for all purpose flour. Mix some water in all purpose flour to make thick consistency for dipping in the balls. Once dipped it in all purpose flour, roll it in breadcrumbs for coating. Repeat this procedure with each ball. Heat the oil for frying, fry these corn potato cheese balls till golden and crisp. Serve hot with tomato ketchup.
