Rasabali a sweet dessert of Kendrapada…..(Odisha)
1 cup chhena
1 tsp sooji
1 tbsp sugar powder(for chhena ball)
1/2 tsp baking soda
4 cardamom powder
1 ltr milk
4 cardamom crushed
Keshar strands( opt)
1/2 cup sugar (less or more as your choice)
Dry fruits for garnish
Ghee or oil for deep fry
In a plate add chhena, sooji, maida, sugar, cardamom powder and baking soda…mix it properly with the palm and make a smooth dought. Out of it make small balls, flatten it and keep aside…
Meanwhile boil milk In a heavy vessel in low medium flame.
Let it boil ..till the milk is reduced to half the amount..add sugar, crushed cardamom and keshar strands (opt) to it…
Heat ghee or oil in a kadai..add the previously done chhena balls one by one…and deep fry them till golden brown in colour..
Add chhena balls to the boiling milk. Boil for another 2- 3 minutes in low flame. Switch off the stove. Let it be cool. Serve chilled with dry fruits….
