Murg Afgani with Oat Meal- Ameya Phate – Nagpur

To prepare oat meal-
Boil finely chopped onion,carrot,capsicum,ginger,garlic & tomato in water,after the vegetables are cooked,add oat meal in a quantity that it will form thick consistency so that it becomes easy to place chicken on top while plating.
Chicken.
Marinate chicken in yoghurt+ginger garlic & green chilly paste+ kasuri methi+cumin powder+coriander powder+ amchur powder+little garam masala.
I dont  have tandoor so i smoke this marinate by placing coal & putting ghee on it.
Dont add a single drop of fat in it. Heat a nonstick pan on high flame & toast black pepper powder & clove powder,add this marinated chicken directly,the yoghurt will start loosing water & chicken will cook in its own juices.
Use nonstick pan only or else chicken will burn because we r not adding fats as lubricants.
Cook chicken on low flame to prevent burning,because burnt chicken will spoil the taste acquired by smoke.
Plate with oat meal first & chicken on top.garnish with green coriander
