Kadhai Murg- Rachcna Nagrani Ahmedabad

KADHAI MURG – One of the favourite dishes when it comes to eating out in restaurants. We often think how to make this at home!! So sharing this easy recipe

with you all. For any kadhai recipe we need to make kadhai masala which is not readily available in market.
INGREDIENTS FOR KADHAI MASALA
Coriander seeds – 3tbsp
Cumin seeds – 1tbsp
Fennel – 1 tbsp
Whole red chillies – 4 to 6
Black peppercorns – 1tbsp
Kasuri methi – 2tbsp
Dry roast all the ingredients in a pan and allow it to cool down. Now grind them coarsely in a mixer. You can store this masala in an air tight container.
INGREDIENTS FOR KADHAI MURG
Boneless chicken – 500gms
Finely chopped onions – 1 big
Finely chopped tomatoes – 1cup
Tomato puree – 1/2 cup
Ginger garlic paste – 2tbsp
One cup onion cut into cubes
One cup capsicum cut into cubes
2 to 3 whole red chillies
cumin – 1tsp
bay leaf – 1
curd – 1/2 cup
Cream – 2 spoons
salt to taste
Turmeric – 1tsp
Red chilli powder – 1tsp
corainder powder – 1tsp
Garam masala – 1/2 tsp
Kadhai masala – 2tsp
oil – 2 to 3 tbsp
finely chopped coriander leaves and thinly sliced ginger for garnishing
METHOD
Heat the oil in a kadhai, add cumin seeds and whole red chillies, then add finely chopped onions. Cook till it changes colour slightly. Then add ginger garlic paste and mix well so that the rawness is gone. Add finely chopped tomatoes and cook till the tomatoes are tender. Now add tomato puree and all other spices along with curd. Mix well and cover the lid of kadhai , let it simmer for few minutes. After that add chicken to it and bhunno. Cook for another 10 minutes or till the chicklyen is tender. Chicken will release its own juices so you may need not to add water to it. If it sticks to the bottom of kadhai then add little water and keep stirring. Now add cream for giving it a smooth texture. Lastly add cubed onions and capsicum and give a good stir. Garnish with chopped coriander leaves , thinly sliced ginger and slit green chilly. Do not forget to sprinkle little kadhai masala before you serve. Serve hot with rumali roti or naan.
PS – You can also add cubed tomatoes, as it gives a good colour to the dish.
