“Mushrooms” – One of my favorite when it comes to vegetarian dishes. Mushrooms are also the only vegan non fortified dietary source of vitamin D. Vegans do not consume any animal products so mushrooms can offer an alternative source of this important vitamin. Mushrooms are high in antioxidants just like carrots, tomatoes, green and red peppers. They are also great sources of protein, fiber, vitamin B, vitamin C, calcium, minerals and selenium.
When buying mushrooms at the market, choose ones that are firm, dry and unbruised. Avoid mushrooms that appear slimy or withered. I often make mushrooms for myself and today I tried making “Kadhai Mushroom”. Sharing the recipe of the same with you all. I hope all mushroom lovers are gonna like it. So here you go
For any kadai recipe we need to make kadai masala which is not available in market. This masala can be used in any kadai recipe….kadai chicken, kadai paneer, mix veg kadai, kadai mushroom.
Ingredients for kadai masala
corainder seeds – 3 table spoons
fennel – 1 table spoon
shahi jeera or cumin – 1 table spoon
whole red chillies – 4 to 6
black peppercorns – 1 table spoon
Dry roast all the ingredients in a pan and allow it to cool down.
Now grind them coarsely in mixer. Store this masala in a air tight box.
Ingredients for kadai mushroom
mushrooms – 200 grams
finely chopped onions – 2
green chilli chopped – 1
tomato puree – preferably home made but one can use the ready made too.
ginger garlic paste – two spoons
powdered cashews – two spoons
cream – two to three spoons
salt, red chilli powder, turmeric, corainder powder, garama masala
red bell pepper, green bell pepper, yellow bell pepper and onion in cubes
wash the mushrooms and cut into desired shape you want.
Heat oil in a pan, add finely chopped onions, cook them till they turn little brownish. Add ginger garlic paste and mix well. Add tomato puree and all dry spices. Also add cashew powder and cream to it. Lastly add the kadai masala and mix well. When the oil separates, add mushrooms. Add water to your desired consistency. let it simmer. Add cubed onions first and bell peppers later. Turn off the stove. Use chopped coriander for garmish.
